Cranberry – Apricot Granola Bars  

I was the girl who never ate breakfast, I mean NEVER. But ever since I was pregnant with Will, I became a huge fan. I love eggs, bacon, waffles, you name it. Savory or sweet, I’m all about brunch. However, during the week I don’t have time to make anything. A couple of months ago I discovered some of the best granola bars – and they’re healthy!

Once a month I make a double batch of the granola bars and individually freeze them so when I’m walking out the door, late, I can quickly grab something. They also make the perfect afternoon snack. They’re a must try! 

Ingredients  

  • cup purchased low-fat granola
  • cup rolled oats
  • cup dried apricots and/or dried cranberries, finely chopped
  • 1/2  cup whole wheat flour
  • egg
  • 1/4  cup honey
  • 1/4  cup canola oil
  • 1/4  tsp. cinnamon

Directions  

1. Heat oven to 325°F. Line an 8×8-inch baking pan with foil, allowing foil to extend over edges of pan. Lightly coat the foil with vegetable cooking spray; set pan aside.  

2. In a large bowl stir together the granola, oats, fruit, and flour. In a small bowl whisk together the egg, honey, oil, and cinnamon. Add to granola mixture. Stir until combined. Pat mixture firmly into prepared pan.  

3. Bake for 30 minutes or until browned. Cool in pan on a wire rack. Use foil to lift mixture from pan. Trim edges, if desired. Cut into bars.  

4. To store, place in an airtight container and store at room temperature up to 3 days or freeze up to 3 months. Makes 15.

    I love breakfast too! My problem is I love it so much I actually eat it every morning and as a result I am late for work. Maybe I should try this breakfast on the run idea! Thanks for sharing, I love the pics!

    I love brunch with the girls and there hasn’t been one lately. Maybe we could schedule an brunch with Molly as a special Urban Aprons guest and then she can blog about it later!!!!!! That would be awesome. Any new brunch places in Minneapolis? I have heard that Al Vento does a good brunch.

    Wow, Mol! This website is fantastic! Not to mention how great these granola bars sound :) Being the new cook that I am, I may have to try to these! Stephanie will have to let me and KC know about good new restaurants in DC…we are always looking for new places to try!
